Sun Dried Apricot-Golden Raisin Chutney

¼ tsp crushed red pepper seed
1 tbsp mustard seed
½ tsp allspice
2 tbsp canola oil
1¼ cup red onion, diced small
2 cloves garlic, slivered
1 cup simple syrup (made by heating ½ cup water and ½ cup sugar together, until sugar is melted)
3/4 cup Traina Sun Dried Apricots Diced, hydrated and drained
½ cup Traina Golden Raisins, hydrated and drained
3/4 cup apple cider vinegar
In a hot saucepan, toast red pepper seed, mustard seed and allspice until frgrant.
Add canola oil. When the oil is hot, add the garlic and diced onion and cook until the onions are translucent and edges begin to crisp. Slowly add simple syrup, sun dried apricots, golden raisins and cider vinegar.
Allow mixture to simmer until the fruit plumps and the mixture is thickened.
Serve as a condiment with a cheese plate, meat or poultry.
