Named for a favorite North Beach Restaurant in San Francisco specializing in grilled chicken!
Start with your favorite already grilled chicken...then pour Ill Pollaio sauce over the chicken and serve.
To Make Sauce:
1 cup olive oil
1/3 cup rice wine vinegar
1/3 cup Dijon Mustard
1 clove garlic, smashed and minced
Zest of 1 lemon
Zest of ½ orange
½ cup fresh orange juice
1/3 cup fresh lemon juice
½ cup Traina Baker's Fruit Medley , soaked 15 minutes in warm water, then drained
½ chopped parsley
¼ cup chopped basil
Combine Traina Baker's Fruit Medley  with orange and lemon juice together in a bowl.
In another bowl, blend vinegar, garlic, mustard and zest.
Slowly pour in oil briskly whisk until emulsified. Add sun dried fruit mixture while whisking.
Serve alongside or on top of grilled chicken...also great tasing atop grilled fish or as a salad dressing.
